I mentioned in my New Year’s resolutions/goals post that one of my resolutions was to continue to try and explore new things while also sharing more of myself to you all. In turn, I hope to inspire and empower you along the way. Also, I’m bringing a new element to the blog. I’m going to dive deep, and share more of myself with you. My hope is for you to learn more about me and it give you more insight of my journey. I originally called Mondays– “Motivational Mondays” but I’m changing it to “Getting Personal Mondays.” I’ll continue to inspire, motivate, empower and enlighten you while I also get personal. For this “Getting Personal” post, I’m sharing my personal experiences from a recent event I attended. What I learned, what it taught me and my accounts of the evening. New Year’s celebrations continued on the evening of January 12th at FiaFNY. One of my fellow blogger friends Loren from Enlightened By Bravery invited me to attend the Gallette Des Rois celebration at the fi:af Skyroom located on the Upper East Side in NYC. The evening was filled with wine, French Cider, savory bites, good company and conversation. Followed by the main attraction — the massive and impressive Gallette Des Rois for all to admire and of course feast on. Gallette Des Rois also known as Kings Cake has been celebrated and recognized by many for years. Various cultures and countries have their own versions of this tradition. It’s to celebrate the Epiphany marking the end of the Christmas season. This celebrates the arrival of the Three Kings to Bethlehem. The Epiphany also known has Three Kings Day is a Christian feast day celebrating the revelation of God in his Son as human in Jesus Christ.
What I learned:
Even though I don’t speak much French (none whatsoever outside the familiar phrases and sayings) it was still impressive and nice to hear a different language other than English. I’ve always found French to be such a romantic and elegant language. **One fact about me is that while I was in elementary school I took French Class then later on learned Spanish.** After hearing the beautiful language again, I was intrigued and thought about relearning the romantic language again. And maybe, I could speak it fluently one day, one day. Practice makes perfect, right?! Even though I didn’t understand some of the French spoken that evening, I admire a beautiful language and I believe its never too late to learn and experience new things like languages and cultures. They also had a photo booth station set up for all to enjoy. If you post your photos on social media you could enter a special raffle for a chance to win tickets to a Comedy Show. Overall, I enjoyed the evening. The event was fun-filled and a great experience. Nothing like stepping outside your comfort zone and learning new things. I promised myself to continue learning, exploring and experiencing new things. The perfect evening to learn and enjoy some French culture. A great way to kick-off the New year and accomplish one of my goals/resolutions. This is something I’ll continue to do and I hope you’ll join me in doing so!

This year my husband and I hosted our 3rd annual Friendsgiving. An evening filled with lots of laughs, love and a whole lot of food. We definitely feasted that evening. I may have gone a little overboard on the food–let’s just say that it was enough to feed an army. Another fact about me: I enjoy hosting, entertaining, cooking and creating recipes to share with everyone. All I can say is that it was worth it and I’d do it all over again in a heartbeat. To be honest, I didn’t take many photos from the evening, why you ask? Although, I enjoy capturing all of life’s moments. I simply wanted to enjoy the evening with our friends and take in the moment. If you follow me on Snapchat (SocFashBeaut17) then you saw a glimpse of the festivities. I love this time of the year, it gives me all kinds of feels. It made me realize even more how blessed, grateful and thankful my husband and I are for family and friends.
Before every Friendsgiving I also prep before the evening. I think of the menu, tablescape and home decor for the evening. My go to source for inspiration is Pinterest. Pinterest is a great resource for all sorts of things, definitely a website to check out if you haven’t already. As for the invitations I make sure to send them out way in advance to give our guest ample time to make work out their schedules. I love a good handwritten letter any day. I’m all about personal notes and touches. But since we live in a Social Media and Tech day in age my go to source to send out invitations is via Evite. It’s user friendly, it has a variety of invitation templates to choose from and your guest will receive your invite instantly via email. Simple, fast and easy. Our theme for the evening was Chic Holiday Glam using accents of Silver and Gold. I love having fresh flowers and candles to add to the table. Fresh roses are beautiful, they smell great and they make for a great centerpiece for any table spread. Candles add a nice touch to your tablescape and home decor. Giving off that intimate and homey feel. I added some glitter pine cones, votive candle holders, gourds and painter hurricanes. With little accents here and there, I kept the tablescapes and decor simple, elegant and chic.
For the Appetizer Table: I added a few gourds to the table I thought they fit perfectly for Fall and our Friendsgiving theme. I filled some silver painted hurricanes with old wine corks and filled red mason jars with flowers to complete the table spread.
For the Main Dining Table: I had fresh flowers in low vases and glass hurricanes with floating candles as the main centerpieces. I added a few glitter pine cones as table accents.

This year, we welcomed old and new friends and family to our home. Our Friendsgiving was filled with many fond moments that we can add to the book of memories we’ve compiled over the years. After eating, we enjoyed some laughs, drank wine and played a few fun rounds of Charades. All in all the evening was fun and enjoyable. We thank everyone who came and enjoyed the evening with us. We’re thankful, grateful and blessed to have you all in our lives. Thankful to see another year and share a wonderful evening with friends who’ve become family. Our hearts are overjoyed with so much love and I know how tummies were filled and stuffed with delicious food. Thankful, grateful and happy to end 2016 on a good note and with more memories to cherish forever. May we continue to celebrate the good times in our lives together in the years to come.

Who doesn’t love a good getaway….. This quick , yet fun escape destination was Miami! I stayed at the beautiful Dream South Beach located on the famous Collins Avenue. This ever so chic, upscale and art-deco inspired boutique hotel was the absolute dream. The the perfect location to unwind and relax for the weekend. The Dream South Beach is within walking distance to just about anything: Ocean Drive, Lincoln Road, restaurants, shopping, the beach you name it. The hotel features a rooftop pool, lounge, spa and a Mexican restaurant. Whatever you decide to do during your visit, your guaranteed a great time.
Miami is always fun, the perfect travel destination to celebrate a milestone birthday or any celebration for that matter. The perfect weekend for fun in the sun, family bonding and celebrating with my girls.

At the time, I had been dealing with some personal conflicts in my life, and thru her coaching methods, Shanita helped me work through those underlying feelings I was having. She coached me thru it, and made me face it head on. She had me stand up and face all my fears and doubts, and confront it. In that 30 minutes I felt a huge weight off my shoulders. I felt strong, empowered and unbothered by what had been effecting me. We went over my 30 minutes slightly, but she helped me find my inner strength and be at peace with it all. Rowden and Liezl planned to marry on July 8th, 2014, on his 30th birthday. In the midst of the planning their upcoming nuptials, the couple found out that Rowden was diagnosed with stage IV liver cancer. Rowden’s last request was to marry Liezl. With the help of his family, friends, and the Philippine General Hospital, Rowden received his dying wish.
On his deathbed, he said “I Do” do Liezl for all his family, friends, and the hospital to witness. Sadly, on June 8th 2014, Rowden passed away, less than 10 hours after his wedding. His memory lives on with his wife, his family and friends. He passed away with this unforgettable moment that he and Liezl shared.
My condolences goes out to his wife Liezl, his family and friends. This video was so touching and heartfelt. Rowden is no longer suffering, and he is survived by his wife Leizel May, daughter Zakiah Rowzel, mother Lorelei, and brothers Hasset & Hisham. May he rest in peace.

Watching this and hearing their story really touched my heart. It made me think about love and all its possibilities. It also made me think about my faith too. The bond that two people share, and the love that’s within two people is so powerful, that against all odds Love shines through. Though Rowden got his dying wish, by marrying Liezl, he still lost his fight to cancer. Cancer is such a deadly killer and I hope one day we can find a cure for all cancers so we won’t lose the ones we love so soon.
This story was so touching, I had to share it with you all for my Wedding Wednesday series. Against all odds, love is out there for all of us, Even in our last moments, love happens. I hope this story and video touched your heart and inspired your souls as it did for me. Never lose faith on love, it’s out there. Never lose hope, for Rowden didn’t. Even though he was dying, he still married the love of his life. He remains now, the guardian angel for his wife and his family always looking down and watching over them.
Remember that even when the going gets tough, and your stressed to the bone with all the wedding planning, remember why you’re marrying your partner. Why did love happen for you? Amidst everything, never lose sight on your love and its’ meaning. Every love story has a something unique, for Rowden and Lizel, they had a fairytale love, that will last in their hearts and minds forever. What does your love story tell…….

November has been a great month so far, but can be at times the most stressful and hectic due to work obligations, industry events, and personal engagements that occur in all of our lives. But even through all the madness with the holidays in full swing, and no matter how busy our schedules keeps us, I feel it’s vital and important keeping a balanced life, in all aspects.
Balance I believe keeps our minds and souls happy and no to mention grounded. One of the things I’ve always practiced is continuing to ALWAYS count my blessings. There isn’t a day that goes by that I don’t do this. My husband and I remain grounded in all that we do, and we continue to count our blessings day in and day out. And during the holidays, this is the time where we think most about our families, friends, and how blessed and thankful we are to have you all in our lives. Our lives have become so full, complete with so many blessings and joy because of all the love and positivity in our lives. This is what life is to us. This is what keeps us going in life and we are reminded this daily.
With the holiday season in full swing, my husband and I had our 2nd annual Friendsgiving this past weekend (11/21/15). It was a great way to celebrate the start to the holiday season with some of our closest friends and family. With Thanksgiving in just a few days, we thought what better way to celebrate the holiday season and enjoy some Pre-Thanksgiving festivities than to celebrate and enjoy a night to eat, drink, and be thankful, all together. While also adding more memories to the books. It was a great evening filled with lots of laughs, fun, and very full bellies. In this blog post, I’m sharing some photos from the evening, some of my recipes from the night and what I love to make during the holidays, and some inspiration when planning parties like this one and other holiday get togethers. .
Whenever I’m planning an event or hosting a party, I alway give myself time to plan and prep. For my Friendsgiving I alway plan in advance– the menu, decor, table arrangements etc …. This years Friendsgiving I planned it out 3 months in advance, from setting the date and all the little and big details. Once we finalize a date, I sent out all the invites giving guest ample time to plan. The inspiration behind the decor and tablescape ideas came from either Real Simple Magazine, but I get a lot of my ideas and inspiration from Pinterest. Pinterest is a great source for just about anything. Check out my Pinterest page and boards at : https://www.pinterest.com/SocFashBeaut17/. I love reading up and exploring new ideas and creating things. For me, I LOVE a good DIY! A good DIY project is right up my alley!!
As far as my menu, I get my inspiration either from Pinterest or my long list of my cooking channel shows on my DVR, that I try and catch up on when I can. I adapt a lot of my meals, making each and every meal uniquely mine and giving it a touch of my own cooking esthetic. I like to use a lot of Organic and natural ingredients as much as I can, so I can continue sticking to my healthy lifestyle even during the holidays.

HARVEST FRUIT, GOAT CHEESE, CHOPPED PECANS CROSTINIS
A quick and easy appetizer that combines juicy apples and grapes with creamy goat cheese and toasted pecans for elegant and flavorful bite.
1 c. grapes quartered
1 green apple diced
4 oz. fresh goat cheese, broken into small pieces
¼ c. fresh orange juice
½ c. pecans, toasted
1 French baquette & Olive Oil -or- Crackers
Honey to drizzle over Crostinis
Slice your baquette into ½” pieces and heat up a pan on your stove. Brush the tops of each piece with olive oil. Brown each side of your crostini until its lightly browned then to allow to cool.
Meanwhile, in a large bowl, lightly toss the apples, orange juice, grapes, pecans and goat cheese.
Top the crostinis or crackers with ¼ c. of the fruit mixture and serve immediately.
Drizzle with Honey to top everything off
Plate and serve and enjoy these easy colorful and delish appetizer!
Mini Salted Caramel Apple Pies
For the dough:
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup (2 sticks) cold unsalted butter, cut into cubes
For the filling:
2 cups small diced (peeled) Granny Smith apples
2 teaspoons fresh lemon juice
1/2 teaspoon cinnamon
1/4 cup sugar
2 teaspoons all-purpose flour
8 store-bought soft caramels, roughly chopped
Large flake sea salt
Egg wash (1 egg lightly whisked with 1 Tablespoon water)
Crystal sanding sugar (optional)
Whisk together the flour, salt and baking powder in a large bowl.
Add the cubed butter to the bowl and use your fingers to work the butter into the flour until the mixture is the consistency of wet sand.
Stir in the sour cream (the dough will be very wet), and then turn the dough out onto a well-floured work surface.
Knead the dough a few times until it comes together, adding more flour, 1 teaspoon at a time, if the dough is too sticky to handle. Roll the dough into an 8×10-inch rectangle and dust both sides with flour before folding it into thirds as if you were folding a letter.
Rotate the dough 90º and roll it out again into an 8×10-inch rectangle. Fold the dough again into thirds then wrap it securely in plastic wrap and refrigerate it for at least 30 minutes while you make the filling.
Make the filling:
In a small bowl, combine the apples, lemon juice, cinnamon, sugar and flour, stirring until thoroughly mixed. Set aside.
Assemble the pies:
Preheat the oven to 425ºF.
Remove the dough from the refrigerator and unfold it onto a well-floured surface, rolling it out to a 14×14-inch square.
Using a 3-inch circular cookie cutter or cup, cut out as many circles as possible. Re-roll the scraps and continue cutting out circles until you run out of dough, ensuring you end up with an even number of circles. (You should have approximately 20 3-inch circles.)
Place six of the dough circles on a Silpat or parchment paper-lined cookie sheet. Spoon a small portion of the apple filling into the center of each circle, leaving enough of a border around the filling. Top the apple filling with a portion of the chopped caramels and a pinch of sea salt. Place a second dough circle atop each filled circle then use a fork to crimp the edges together, sealing each pie.
Brush each pie with the egg wash, and using a sharp knife, cut two or three vents on the top of each pie. Sprinkle the pies with crystal sanding sugar (optional).
Bake the pies for about 15 minutes, or until they’re golden brown.
Remove the pies from the oven and allow them to rest for 10 minutes before serving. Repeat the filling and baking process with the remaining dough circles.
The cubed apples should be no larger than the size of corn kernels to ensure they become tender during the quick 15-minute bake time.
Large flake sea salt is available in most supermarkets.
If the dough is too firm to work with after refrigerating, allow it to sit at room temperature for 10 minutes before cutting out the circular shapes.
If the sour cream in the dough makes it too sticky at any point in the rolling out process, just simply sprinkle a pinch of flour atop the wet areas and continue rolling.
Plate and serve. These are so great and you won’t feel guilty about all the calories, because they are mini, cute and oh so delicious!! Enjoy!
This year I’m thankful for….
My husband has been my rock and a huge support from day one, now and always. Always cheering me on in all my endeavors and projects that I’ve taken on this year. Always loving me and putting me and our family first. And for all the things he does for us and for our future.
For my friends who’ve always kept me grounded, always keeping a smile on my face and bringing laughter and joy in my life.. Keeping all the positive loving vibes flowing. Grateful for moments like these with them. Always reminding me to smile always, laugh often, stay carefree, and ALWAYS eat well!
For the family whose been there for me through thick and thin and remain a positive light in my life. The people I can call on and count on and whom I’m grateful to have in my life. Those near and dear to my heart. I am who I am today because they’ve been a huge part in shaping the person I am today.
